This particular version of the antenna, I gave my Italian mother in law, who is from Sicily, and was passed from generation to generation, with little variation. Pasta and potatoes may seem a bit strange as a combination, but I can assure you that if cooked well, then, is one of the dishes of southern Italy.
Ingredients.
The extra virgin olive oil
Salt
One medium onion
A piece of beef stew or braise
A medium box of Italian peeled tomatoes
A carrot
About seven medium potatoes
Pasta (spaghetti, no)
A pepper. (Optional)
First step. Prepare the tomato sauce, which is the basis for most pasta dishes. Slice and fry the onion and add a teaspoon of salt. Add diced meat to cook. When the onion and the meat is cooked, add a little water. Remove meat and set aside to eat later.
Step two. Add the canned tomatoes and grated carrot in the mix. Simmer, then add the potatoes and dice to the pan.
The third step. Before serving, you can add a hot pepper, diced, which will give the potatoes a little “bite.”
To prepare salsa style of southern Italy, which takes about five peppers and a little oil. Remove from heat and place in a glass container, preferably with a lid. Cover with olive oil and place the lid on the container. Cool and stir occasionally to release the flavor. This chile can be put on the table to be used at will, with pasta dishes, including pasta and potatoes.
